Instructions
  1. Let the chicken stand at room temperature for 30 minutes prior to prep
  2. Preheat the oven to 475 degrees F
  3. Cover chicken with olive oil, salt and pepper and rub into the skin
  4. Prick the lemon 5 times with a fork and insert into the chicken cavity
  5. Turn the oven down to 400 degrees F
  6. Cook for 1 Hour 20 minutes basting halfway
  7. Let rest for 15 minutes before serving
