This is a hearty soup that has lots of options depending on how you are feeling. It can be vegetarian or you can add a meat stock or meat into the soup.

Instructions
  1. Saute the onion and celery in the butter until tender
  2. Stir in the flour, pepper, salts and stir constantly to cook the flour
  3. Gradually add the broth
  4. Stir to mix in well. Cook the stock mixture until slightly thickened
  5. Add cooked vegetables and cook for a few minutes until incorporated
  6. Add milk and cheese. Do not boil
  7. Optional: Use a hand blender to blitz the soup

Here are a few variations I have tried (and LOVED) of this recipe:

  1. Puree the Broccoli prior to adding to the soup for a silky smoother version of this soup.
  2. Use corn and cooked ham as the "vegetable" component for a corn and ham chowder version.
  3. Try shredding the onions instead of chopping them to hide them for picky eaters
  4. Try using cooked potatoes instead of flour. This makes for a nice heartier style soup. One of my favourite variations!
  5. Use bacon fat instead of margarine and add the bacon back at the end for a bacon version
  6. Add ginger and butternut squash as your vegetable but substitute coconut milk for the milk... Mmmm

Punch Recipe
This is the basic punch recipe that I use at all our family parties and any that I'm planning. I will post a few different variations as well so you can try out any that tickle your fancy!

  • 1 part Alcohol I usually substitute with another part sugar if trying to make a non alcohol punch
  • 1 part Sugar
  • 1 part Lemon or Citrus
  • 1 part Water I sometimes use Ice for this but sometimes I use Ice as well as Water depending on the rest of the ingrediants
  • 1 part Tea/Spices

Here are a few different variations I have tried with this punch recipe:

Amaretto, Cranberry Juice, Sliced Lemon, Water, Arizona Green Tea - This is a nice one for Christmas time!

Ginger Ale, Frozen Concentrated Mango Juice, Lemonade, Ice, 7up - This is a nice one for a baby shower or a wedding shower.

Rum, Frozen Concentrated Cranberry Cocktail, Sliced Lime, Ice with Orange pieces frozen in them, Frozen Concentrated Nestea - Another good one for Thanksgiving or Christmas

Amaretto, Frozen Raspberry Concentrate, Sliced Lemons, Water, Ginger Ale

Grenadine, Frozen Orange Juice Concentrate, 7Up, Water, Orange Slices - This is a fun "Shirley Temple" style punch that is always a hit and my GO to!

I bought freezie pouches and fill these up with any leftover smooties for the kids!

If you can afford it the BEST blender on the market is the Vitamix but I just use my KitchenAid hand blender with great results!

  1. Grease a 9in x 5in x 3in Loaf Pan and Preheat the Oven to 350 degrees F
  2. In a large bowl whisk together all the dry ingredients, Flour, Baking Soda, Salt and Sugar
  3. Mix in Eggs, Butter and Mashed Bananas
  4. Pour mixture into loaf pan
  5. Bake for 1 Hour

  1. Let the chicken stand at room temperature for 30 minutes prior to prep
  2. Preheat the oven to 475 degrees F
  3. Cover chicken with olive oil, salt and pepper and rub into the skin
  4. Prick the lemon 5 times with a fork and insert into the chicken cavity
  5. Turn the oven down to 400 degrees F
  6. Cook for 1 Hour 20 minutes basting halfway
  7. Let rest for 15 minutes before serving
